Because in 132 ATC (or 3521 BBY) at the second summit on Alderaan the Galactic Republic and the Sith Empire agreed on defining a standard orientation for space travel oriented by the spin of the galaxy, such that the upwards direction for ships would be such that the galaxy spins counter clockwise. As a result the ships' navigation systems were built in such a way to automatically get into that orientation after leaving the orbit of planets. This got such a fundamental part of navigation systems that no one questioned it and ships up till the time of the new republican era kept this basic behaviour.

Probably has more to do with how the ships were filmed way back before they were doing it on computers. Betcha audiences just got used to seeing ships meet both "right side up" and not moving in 3d space that now if they try it in a way that makes technical sense it disturbs the audience.

there is up and down, the galaxy is kinfa flat-ish. I dont know the term in English. In czech its called plain of "ekliptika, which states plain for each object in universe. Or solar system has this plain too and so does a galaxy, so it would be logical to follow this rule also in sci-fi movie
